Montgomery County Resident Earns Nutrition Scholarship

Immaculata University is proud to announce that graduate student and resident of Plymouth Meeting, Pa., Lori Lopez de Leon is the recipient of the Phyllis Carpoletti Nutrition Scholarship. The scholarship honors Registered Dietician Nutritionists (RDNs) who model the dedication which Phyllis Carpoletti demonstrated in the field of dietetics. The Phyllis Carpoletti Scholarship Committee, comprised of Philadelphia-based RDNs, gathered at Immaculata University to present Lopez de Leon with the $2,500 scholarship.

Lopez de Leon is presently pursuing her master’s in Nutrition Education and is currently eligible to take the exam to earn her credentials as an RDN. She shares many traits with the scholarship’s namesake. Lopez de Leon is a non-traditional student and is passionate about nutrition and dietetics. Also like Carpoletti, she is a graduate of Immaculata’s dietetic internship program and is pursuing dietetics as a second career.

“I am so honored to be a recipient of the Phyllis Carpoletti Nutrition Scholarship,” said Lopez de Leon. In addition to the recognition she received by earning the honor, receipt of the scholarship has enabled Lopez de Leon to graduate a semester early.

The scholarship was established to honor Phyllis Carpoletti, an RDN from the Philadelphia area who passed away in May 2013. She was a member of both the Philadelphia and Pennsylvania chapters of the Academy of Nutrition and Dietetics. She also served as president of the Philadelphia Dietetic Association and chair of the Annual Meeting & Exhibition (AME). The scholarship was founded in her name to help provide quality nutrition education for aspiring dietetics professionals.

Immaculata University is a Catholic, coeducational institution of higher learning, located on the Main Line between Malvern and Exton, 20 miles west of Philadelphia.
