BIOGRAPHY:
Dr. Adkins is a California native. She is a registered dietitian nutritionist with more than 25 years of experience in clinical, community, private practice, and higher education. She has been a faculty member at Immaculata University since 2016. Dr. Adkins has been actively involved on the executive board of the Nutrition Educators of Health Professionals practice group since 2015. She has worked to establish a nutrition education for student athletes program and has helped implement an evidence-based body positivity promotion and eating disorder prevention program at Immaculata University. Dr, Adkins is also involved with a local food cooperative seeking to establish a community owned and operated grocery store with an education outreach initiative to provide nutrition education within the community.

Research Interests
Dr. Adkins’ research interests include furthering her doctoral research in the area of cultural competence, body positivity and eating disorders, and sports nutrition education and student athletes.
